Temperature ranges of cultivated mushrooms

Choose a species that fruits at temperatures near your outdoor temperatures. This limits investments in climate control and reduces energy costs. As the table shows there are actually few species suited to really tropical conditions. The only mushrooms currently being cultivated at temperatures around or just below 30°C are: oyster mushrooms (Pleurotus cystidiosus / abalones / ostreatus var. florida) and Volvariella volvacea, Agaricus bitorquis, Stropharia rugoso-annulata and wood ear mushrooms (Auricularia politricha).

Temperature ranges and techniques for mycelial growth, optimal growth and fruiting for specific mushroom species:

1. Lentinula edodes /Shiitake:
• The range at which the mycelium stays viable; the growth speed declines at both high and low ends of this range: 5-35°C
• The optimal temperature range required for fruiting; the most important temperature: 20-30°C

2. Pleurotus abalonus /Abalone oyster mushroom
• The range at which the mycelium stays viable; the growth speed declines at both high and low ends of this range: 15-35°C
• The optimal temperature range required for fruiting; the most important temperature: 20-30°C

3. Pleurotus cystidiosus /Oyster mushroom
• The range at which the mycelium stays viable; the growth speed declines at both high and low ends of this range: 10-35°C
• The optimal temperature range required for fruiting; the most important temperature: 25-28°C

4. Pleurotus ostreatus /Winter oyster mushroom
• The range at which the mycelium stays viable; the growth speed declines at both high and low ends of this range: 5-35°C
• The optimal temperature range required for fruiting; the most important temperature: 20-25°C

5. Pleurotus pulmonarius /Oyster mushroom
• The range at which the mycelium stays viable; the growth speed declines at both high and low ends of this range: 5-35°C
• The optimal temperature range required for fruiting; the most important temperature: 20-25°C

6. Pleurotus cornucopiae / Branched or yellow Oyster mushroom
• The range at which the mycelium stays viable; the growth speed declines at both high and low ends of this range: 15-35°C
• The optimal temperature range required for fruiting; the most important temperature: 20-28°C

7. Pleurotus djamor/Pink oyster mushroom
• The range at which the mycelium stays viable; the growth speed declines at both high and low ends of this range: 15-35°C
• The optimal temperature range required for fruiting; the most important temperature: 24-30°C

8. Pleurotus eryngii /King oyster mushroom
• The range at which the mycelium stays viable; the growth speed declines at both high and low ends of this range: 10-35°C
• The optimal temperature range required for fruiting; the most important temperature: 20-25°C

9. Auricularia polytricha /Wood ear mushroom
• The range at which the mycelium stays viable; the growth speed declines at both high and low ends of this range: 20-35°C
• The optimal temperature range required for fruiting; the most important temperature: 35-30°C
